Today I’ve just got the dinner idea you were looking for. I spent my day searching for a simple recipe for tonight’s dinner, and ended up making something totally unplanned. I didn’t use a recipe, but actually made one myself.. it’s a simple one so I certainly recommend trying it out. A bit spicy, a bit sweet, the combination of flavours will surprise you in a good way and the family will enjoy it.

Ingredients
- 150 g chickpeas, canned or pre-cooked
- 1 onion, finely chopped
- 100 g arborio rice
- 300 ml vegetable stock
- 1 tsp parsley
- 1/2 tsp nutmeg
- 50 ml white wine
- 1 tbsp butter
- 400 g turkey drumstick
- 1 tsp red paprika
- 1 tsp curry powder
- 1 tbsp honey
- 3 tbsp Sriracha sauce
- 2 tbsp vegetable oil
- Olive oil
- Salt & pepper to taste
How to
- Whisk together honey, Sriracha sauce, vegetable oil, red paprika, curry powder, ground pepper and salt. Season turkey drumsticks with the seasoning mixture and set aside to marinade.
- Heat 1 tbsp of olive oil in a medium sauce pan, add finely chopped onion and let it simmer for a few minutes until soft. Stir in rice and white wine, cook until the alcohol evaporates before adding 1/3 of the vegetable stock.
- After the vegetable stock evaporates and rice doubles in size stir in pre-cooked chickpeas, the rest of the vegetable stock, of course as much as you need, parsley and nutmeg. Finish the risotto by stirring in a tbsp of butter.
- Slowly grill the marinated turkey drumsticks in a large grill pan until golden brown and crispy. Enjoy!
