Fajitas & roasted potatoes

New job, new languages, new skills, new friends and good times that come with them – that’s just what March was and still is for me. Seems like this year is off on a good start and it’s getting better with every day. My favourite part is hosting dinner parties and hanging out with my friends surrounded by delicious food and wine from the island of Hvar, known for having one of the best wines in Croatia. So this post is all about that, hosting dinner parties and enjoying life with the people you love.

Probably the best idea for a dinner party are fajitas. They are delicious, easy to make, most of the people who I know absolutely love them and they go so well with a pint of beer. My friends came over the other day, we started drinking beer, I made fajitas, we turned up the music and finally celebrated the fact that I got a new job. It was all great until the neighbours came over because of the noise and we had to go out. But it was fun while it lasted and the night was still young. 😀

Ingredients

Fajitas:

  • 12 tortillas
  • 300 g chicken, sliced
  • 1 tsp curry powder
  • 1 tsp smoked red paprika
  • 1/2 tsp garlic powder
  • 100 g onion, sliced
  • 150 g green beans, snapped
  • 75 g corn
  • 75 g red beans
  • 150 g red bell pepper, sliced
  • Salt & pepper to taste

Roasted potatoes:

  • 600 g potatoes, sliced into wedges
  • 2 tsp red paprika
  • 1,5 tsp cayenne pepper
  • 2 tbsp vegetable oil
  • Salt & pepper to taste

Salads:

  • 1 lettuce, sliced
  • 1 cucumber, sliced
  • 1/2 red cabbage, sliced
  • 1/4 red onion, sliced
  • 2 tsp yogurt
  • Vegetable oil
  • Aceto balsamico bianco
  • Salt & pepper to taste

How to

  1. Preheat the oven to 200° C. Place a large parchment paper over a baking tray.
  2. Season sliced potato wedges with red paprika, cayenne pepper, vegetable oil, salt and pepper. Transfer spicy potato wedges over the parchment paper on the baking tray and roast them in the oven until crispy and golden.
  3. Season sliced chicken with curry powder, smoked red paprika, garlic powder, salt and pepper. Sprinkle some vegetable oil over a large non-stick pan and heat it over medium heat. Add seasoned chicken in the pan and cook until cooked all the way through.
  4. Remove chicken from the pan and add sliced onion, let it simmer. Stir in snapped green beans, sliced bell pepper, red beans and corn. Let the vegetables simmer for a bit before adding in cooked chicken. Toss the ingredients a few times and cook for a few more minutes until the vegetables are cooked and all the flavours combined.
  5. Season sliced lettuce with salt, aceto balsamico bianco and a sprinkle of vegetable oil.
  6. Place sliced cucumber, red onion and cabbage in a large bowl. Season with salt, yogurt, a sprinkle of aceto balsamico bianco and vegetable oil.
  7. Make the fajitas by placing the ingredients on top of tortillas and rolling them yourself. Enjoy fajitas with roasted potato wedges, lettuce and coleslaw salad!

  1. Sounds wonderful, and you’ve had a LOT of changes!! I guess next time you’ll have to have the neighbors over (or bake a little something and drop it by! A little PR work, lol!)
