Spicy beef stir-fry with rice noodles

Every time I’m busy and I’ve got a fridge full of fresh vegetables, I choose stir-fry for lunch or dinner. It’s the easiest and most flavorful dish you can prepare with any combination of ingredients in practically no time. I also love spicy food, and a few months back I bought the large extra hot Sriracha sauce, my family’s not a fan but I use it a lot when cooking. So using Sriracha in my stir-fry was a no-brainer. Check the rest of the recipe out below, it’s spicy, flavorful and delicious!

Cook time: 20 min

Servings: 4


Ingredients

  • 300 g rice noodles
  • 100 g zucchini, julienne sliced
  • 70 g carrot, julienne sliced
  • 100 g broccoli, sliced
  • 70 g onion, sliced
  • 300 g beef, sliced
  • 100 ml vegetable broth
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp extra hot Sriracha sauce
  • 2 tsp oyster sauce
  • 2 tsp cornstarch
  • Salt & pepper to taste

How to

  1. Bring slightly salted water in a medium pot to a boil. Cook rice noodles for a few minutes until cooked al dente.
  2. Heat sesame oil in a large wok. Add sliced beef, broccoli, zucchini, carrot and onion. Let them simmer and toss every now and then for a few minutes.
  3. In a small bowl mix cornstarch with a two tablespoons of vegetable broth and in a medium bowl mix together the rest of the vegetable broth, soy sauce, Sriracha sauce, oyster sauce and a bit of ground pepper.
  4. While the vegetables are still crisp stir in cooked rice noodles and the vegetable broth and spices. Cook until all the ingredients are cooked and combined, then mix in the cornstarch combined with the vegetable broth. Toss a few more times and that’s it! Enjoy!
