Simple Tuesday calls for a simple recipe, and that’s just what this salad is. Most of the traditional main dishes call for a simple salad as a fresh addition to the meal, either it’s fresh lettuce, lamb’s lettuce, arugula or even coleslaw, tomatoes and any other seasonal vegetable. And what would a salad be without a yummy dressing, vinaigrette is the perfect option for me, I’m not a big fan of those mayo or yogurt-based. I practically prepare salad every day for my family as a part of our dinner and from an early age I’ve enjoyed eating it, which many family friends found surprising since their children wouldn’t even touch vegetables.
My brother used the same methods as my parents did and now his kids are the only kids who like to eat veggies from the soup at the family get-togethers, not to mention that even I got surprised when my 3yo nephew asked for a piece of broccoli in my bowl of soup because he didn’t get one. Now my 1yo niece copies everything from her older brother and even she enjoys lettuce at our Sunday family dinners. Vegetables are an important part of our diet and we should be eating them as much as we can, either fresh in salads or cooked!

Ingredients
- 400 g red cabbage, finely sliced
- 200 g red bell pepper, sliced
- 2 tbsp aceto balsamico
- 2 tsp olive oil
- 1 tsp dijon mustard
- 1/4 tsp garlic powder
- 1/2 tsp brown sugar
- Salt & pepper to season
- In a small bowl whisk together aceto balsamico, olive oil, dijon mustard, garlic powder, brown sugar, salt and ground pepper until combined.
- Place sliced red cabbage and red bell pepper in a bowl. Season the salad with balsamic dressing. Enjoy!

Does it get any prettier than that! This is the first coleslaw recipe that I’ve come across with a balsamic vinaigrette. A perfect side for tacos or mini-sliders.
