Vegetarian pizza

As it is clear from the title of the post, today I’m sharing my version of the Vegetarian pizza recipe. When it comes to pizza, for me the crust is as important as the combination of toppings on it. Every time I make homemade pizza, I always have to stop myself from using too many toppings, especially when making the Vegetarian one. Sometimes it’s all about using the right combination of ingredients, and sometimes it comes down to using vegetables you have in the fridge and stumbling upon a delicious result.

Tomorrow the Christmas market in Zagreb is opening as the no. 1 Christmas market in Europe and the official festive holiday season is beginning in Zagreb. The whole city is covered in lights, food stands with all kinds of delicious Croatian dishes and pastries, mini concerts on each square, we even had an artificial skiing trail coming down one of the oldest streets in Zagreb with the finish line placed on the main square. Excited and happy as I am, I’m enjoying pizza, before the season of festive dishes starts.

Ingredients

Pizza dough:

  • 250 g all-purpose flour
  • 4 g fresh yeast
  • 150 ml water
  • 1 tbsp olive oil
  • pinch of salt

Tomato sauce:

  • 350 ml crushed peeled tomatoes
  • 2 tbsp olive oil
  • 1 tsp oregano
  • 1/2 tsp basil
  • 1/2 tsp parsley
  • Salt & pepper to taste

Toppings:

  • 300 g Mozzarella cheese, grated
  • 100 g Edam cheese, grated
  • 50 g cabbage, sliced
  • 50 g carrot, grated
  • 50 g corn
  • 50 g chickpeas
  • 50 g mushrooms, sliced
  • 70 g tomato, sliced
  • 40 g olives

Vegetarian pizza

How to

  1. Melt fresh yeast in a cup of room temperature water. Mix it in with fresh flour, pinch of salt and olive oil until all the ingredients combine and you get a firm dough. Set aside in a warm spot to double in size.
  2. Sprinkle some olive oil over a large baking tray. When the dough doubles in size spread it over a large baking tray (if baking in the oven).
  3. Place crushed peeled tomatoes, olive oil, oregano, basil, parsley, some salt & pepper in a medium sauce pan. Cook over medium heat until it comes to a boil, stirring occasionally.
  4. Preheat the oven to 250° C.
  5. Spread the tomato sauce over the spread out dough. Top the dough with grated Mozzarella cheese, Edam cheese, cabbage, carrot, corn, chickpeas, mushrooms, tomatoes and olives.
  6. Bake in the oven for about 10 to 15 min until crispy and cheese has melted. Enjoy!
