This is one of those days when inspiration doesn’t hit and you have to stay with what you know works. Pork belly and roasted potatoes are a classic dish, but when it comes to classics it’s all about the spices and seasoning you’re going to use to make them stand out. That’s what I did in this case, I used dark beer, honey and dijon mustard to marinade pork belly, and to get that delicious glaze over it when grilling on the outside grill. And roasted potatoes aren’t ordinary as well, garlic, turmeric and red paprika may seem like an unlikely combination, yet that combination comes as a lovely surprise of flavours.

Ingredients
- 400 g pork belly, sliced
- 1 dl dark beer
- 1 tsp garlic powder
- 1 tsp honey
- 2 tsp dijon mustard
- 400 g potatoes, sliced
- 2 tsp red paprika
- 1 tsp turmeric
- 1 tsp garlic powder
- Sriracha ultra hot sauce
- Vegetable oil
- Salt & pepper to season
How to
- Season sliced pork belly with salt, ground pepper, garlic powder, honey, dijon mustard and dark beer. Set aside for at least 1 h to marinade.
- Preheat the oven to 200° C. Place a piece of parchment paper over a large baking tray.
- Season sliced potatoes with red paprika, turmeric, garlic powder, salt and ground white pepper. Place sliced potatoes on the baking tray covered with parchment paper. Sprinkle vegetable oil over them and bake in the oven for about 1 h, you can stir them after baking for 40 to 45 min.
- While the potatoes are in the oven, heat a large grill non-stick pan. Grill marinated pork belly for at least a few minutes on each side, until golden and crispy. Enjoy pork belly with some Sriracha ultra hot sauce and roasted potatoes, with a large bowl of fresh lettuce, or coleslaw.
