When it comes to lunch or dinner, salad of any kind is unavoidable on my menu. Lettuce is mainly what I prepare and I buy one each day at the local farmers’ market. For the last few years I’ve been adding arugula to it, or lamb’s lettuce, radicchio, baby spinach or some of the fresh vegetables such as bell peppers, onion and tomatoes, with a delicious balsamic dressing. Not only is it fresh and yummy, it’s healthy, and better to eat that than boring every-day unnecessary carbs.
Here’s a classic version of a 5 min – salad with a tasty Balsamic dressing!

Preparation: 10 min
- 60 g red onion, sliced
- 100 g green bell pepper, finely sliced
- 150 g tomato, sliced
- 150 g arugula
- 100 g red kidney beans
- 1 tsp Dijon mustard
- 1 tsp brown sugar
- Pumpkin oil
- Aceto balsamico
- Salt & pepper to season
- Place sliced red onion, bell pepper, tomato, arugula and kidney beans in the sam bowl.
- In a small bowl whisk together Dijon mustard, brown sugar, pumpkin oil, aceto balsamico, salt and ground pepper.
- Top the salad with balsamic dressing & enjoy!
