Creating and planning vegetarian dishes is easy if you have inspiration. It’s also easy to be vegetarian if you know how to cook and prepare delicious dishes consisting of colorful and flavorful vegetables. Don’t get me wrong, vegetarian diet doesn’t consist of just vegetables, but they’re the best part because they bring so much flavour to the whole dish. I’m not a vegetarian, but it doesn’t mean that I don’t enjoy rich flavorful vegetarian dishes, prepared by my friends or when eating out.
The reason why I even tried preparing vegetarian dishes and giving them a chance when eating out, was a friend of mine who is vegetarian. I never believed how delicious and fulfilling vegetarian dishes can be, and actually are. Most of my friends who aren’t vegetarian don’t even want to give some of those dishes a try, thinking that they aren’t as tasty or as fulfilling. Let me tell you now – they are, give them a chance, you won’t regret it!

Preparation: 15 min
Cook time: 20 min
- 450 g penne pasta
- 150 g Gorgonzola cheese
- 60 g Parmesan cheese
- 100 g baby spinach
- 50 g walnuts
- 4 tbsp butter
- Fresh parsley
- Fresh basil
- Olive oil
- Salt & pepper to taste
- Bring slightly salted water to a boil in a large pot. Add penne pasta and cook until al dente. Remove from heat, drain water.
- Sprinkle some olive oil over a large pan over medium heat. Add baby spinach to the pan and cook for a minute before adding Gorgonzola cheese, Parmesan cheese, walnuts, some fresh parsley and basil, salt and pepper, and butter. Cook for a few minutes until cheese melts and ingredients combine.
- Finish the dish by stirring in cooked penne pasta. Enjoy!
