Crepe is a French word for a pancake, and since I was a kid, the meaning of pancakes here in Croatia was a thin one with strawberry jam or Nutella spread. Later by watching TV shows and movies the thick American pancake was introduced to me, but I always loved those thin ones a bit more.
So I’ll be talking about crepes in this recipe and an interesting fact is that the first ones made were made from buckwheat, while the white flour crepes were prepared later in history due to high price of white flour compared to buckwheat. Even though it’s not February 2nd or Jour des crêpes – famous French holiday when you eat crepes, I prepare them every now and then, and it wasn’t long since I posted the delicious Mille crepe blueberry cake recipe (you can check it out below).
The Ricotta cheese spread was a new one for me just a month ago when I first tried it out, but the flavour stuck with me and I had to combine it somehow with crepes, so I did and the result was marvelous. Try it out, you won’t regret!

Ingredients
- 200 g hard flour
- 200 g soft flour
- 3 eggs
- 500 ml milk
- 300 ml mineral water
- 4 tbsp oil
- 1 tbsp vanilla sugar
- 2 tbsp sugar
- 1 tbsp brandy
- 1 tsp cinnamon
- 300 g Ricotta cheese
- 80 ml orange juice
- 1 tsp orange zest
- 1 tsp lemon zest
- 2 tsp rum
- 1 tbsp brown sugar
How to
- Place 3 eggs, 1 tablespoon of vanilla sugar, 2 tablespoon of sugar and 1 teaspoon of cinnamon in a large bowl and whip the ingredients until all combined. While mixing the mixture, gradually add 200 g both of soft and hard flour, 500 ml of milk, 300 ml of mineral water, 4 tablespoons of oil and 1 tablespoon of brandy.
- Heat a large non-stick pan and when it’s hot pour the batter into a pan and spread it evenly. Once the bubbles start to appear flip the crepes and when done place on a large plate to cool off.
- In a medium bowl mix together Ricotta cheese with orange juice, orange and lemon zest, rum and brown sugar. Spread some Ricotta mixture over crepes and enjoy!

As a French person, I approve this recipe 😋 But the most interesting part in crêpe making is the flipping: do you use a tool (fork, spatula…) or did you master the true art of flipping by making the crêpe jump with just a twist of one hand ? 😜

Just a twist of the hand must admit, no matter how big of a pan I use.. for me it’s easier than using a spatula 😀 Thanks for the nice words, you have to try the Ricotta – orange mix as a spread for crepes, it’s really tasty! 🙂
