Grilled chicken salad

Usually every Friday we have a big dinner, and it seemed like we were going to have it today, but then it started raining cats and dogs and my brother and his kids decided not to come. Since there was no need to prepare a big, lavish dinner I decided to make something light, colorful and healthy, as much as it could be.

I’m a big fan of salads, and a dinner served in my home doesn’t come without a fresh bowl of either lettuce, or coleslaw, or maybe even lamb’s lettuce. One of my favourite salads is Grilled chicken salad, where I can use any combination of vegetables with a fresh dressing on top.

Ingredients

  • 180 g tomato, sliced
  • 80 g spring onion, sliced
  • 70 g carrot, grated
  • 160 g lettuce, sliced
  • 100 g corn
  • 170 g coleslaw
  • 150 g bell pepper, sliced
  • 400 g chicken breast
  • 2 tsp garlic powder
  • 2 tsp curry powder
  • 2 tsp red paprika
  • 1 tspย Worcestershire sauce
  • Vegetable oil
  • Salt & pepper to taste

Dressing:

  • 2 dl yogurt
  • 2 tbsp extra virgin olive oil
  • 2 tbsp lime juice
  • 2 tbsp apple vinegar
  • 2 tsp shallot
  • Salt & pepper to taste

Grilled chicken salad

How to

  1. Season chicken breast with salt, pepper, garlic powder, curry powder, red paprika and Worcestershire sauce. Sprinkle some vegetable oil over and set aside. Start the outdoor grill and grill chicken breast on each side until cooked all the way through.
  2. Whisk together yogurt, extra virgin olive oil, lime juice, apple vinegar, shallot, salt and pepper in a small bowl.
  3. Slice all the vegetables, add them in bowl. Slice grilled chicken breast and add to the fresh vegetables. Sprinkle yogurt dressing over the Chicken salad and enjoy!

  3. I love salads too and usually have one in some form every day. The dressings can really make a salad special. Great ingredients to go with the grilled chicken.
