While staying at the seaside, I had a chance to see some of my friends, catch up, swim & sunbathe with them and hang out. Some of them also came to the coast from Zagreb, like one of my best friends who came to stay with me for a few days. As she is a vegetarian I had a chance to think of some new recipes that I could prepare for us. But first of all we immediately went to the seaside for a swim.
I just love the Croatian seaside, the crystal blue sea and the beautiful nature where ever you look. As every summer before I used the time I have to explore the island, the best thing about it was that I had a bike to do so. From hidden beaches to places where the view just takes your breath away, and that’s what Croatia is like – full of surprises, hidden gems and breathtaking nature.
Getting back to my recipe, it’s a step from the Croatian and more of an Asian cooking. I’m a big fan of foreign cuisines and love using different and new spices. When preparing a vegetarian dish I just love using lots of different vegetables, and I did it once again with this recipe. My friend loved it at the first bite and would recommend it to all of you who are still thinking about it. Give it a try and let me know what you think!

Ingredients
- 350 g rice
- 1 tbsp olive oil
- 300 ml vegetable stock
- 1 tsp nutmeg
- 1 tsp garlic powder
- 80 g carrot, sliced
- 80 g green peas
- 90 g green beans
- 80 g onion, sliced
- 80 g parsnip, sliced
- 80 g bamboo
- 2 tsp chili pepper
- 2 tbsp peanut oil
- 2 tbsp Sriracha sauce
- 2 tsp soy sauce
- 1 tsp lime juice
- Salt & pepper to taste
How to
- Heat olive oil in a medium sauce pan. Add rice and vegetable stock. Season with nutmeg, garlic powder and salt. Cook until soft and all of the water evaporates.
- Heat peanut oil in a wok. Add sliced carrot, green peas, green beans, sliced onion, parsnip and bamboo. Toss, season with chili pepper, soy sauce, Sriracha sauce and lime juice. Cook until crisp and tasty.
- Serve stir-fried vegetables with rice & enjoy!
