Vegetable soup (Vegetarian)

For the past three years I’ve been using Airbnb app for all my travels. I started using it on a recommendation from a friend and my first Airbnb apartment was when I went to Lisbon, Portugal three summers ago. The biggest benefit of it was that the apartments you can rent are almost 100% cheaper than the hotel or similar accommodation and you can live like a local. So far I had a lovely experience using the app and I would recommend it for all of you who still haven’t registered. This summer as I mentioned in my last posts I went back to my roots and visited some of the most beautiful places on the Croatian coast. After spending some time in Split, I got onto a ferry and continued my trip to the island of Vis. Last time I visited Vis was when I was just a kid and I remembered eating pasta with tomato salsa at our family friend’s house and that’s it, so this time it was like coming there for the first time.

In the afternoon the ferry got to the island, it was hot but the sight of waves crashing over rocks and those narrow streets among centuries-old houses made from rocks made it all worth it. We got to our apartment and left out bags and went to the beach. Even though my first swim in the sea this year was in April, I just wanted to jump in the sea the first chance I got.

I hope my photos captured the city of Vis as the sun was setting down in the distance as beautiful as it is during the day, and more of them will be in my next posts.

This last photo is my personal favourite, I just captured this part of the city where houses go right into the water, and waves crashing over pebbles scattered on the beach while the sun is slowly hiding behind the hills in the distance so the light is just right.

So why the island of Vis reminded me of my favourite Vegetable soup is because we went to a restaurant our first evening and as always I ordered a soup to start my appetite. Not expecting much I was baffled how much it reminded me of my favourite family Vegetable soup, so I just had to share my recipe and a few of my photos from the trip.


Preparation: 25 min

Cook time: 2 h

Servings: 8 – 10


Ingredients

  • 2 red carrots, sliced
  • 1 yellow carrot, sliced
  • 1 parsnip, sliced
  • 1/2 kohlrabi, sliced
  • 150 g broccoli, sliced
  • batch fresh parsley, chopped
  • batch fresh celery, sliced
  • 100 g peas
  • 200 g Ditalini pasta
  • Olive oil
  • Salt & pepper to taste

Vegetable soup

How to

  1. Place sliced red carrots, yellow carrot, parsnip, kohlrabi, broccoli, chopped fresh parsley, celery and peas in a large pot and sprinkle some olive oil over them. Cook the vegetables by letting them simmer over medium heat for a few minutes.
  2.  Season with salt & pepper. Pour in water all the way so it covers the vegetables in a pot and let them cook over medium heat.
  3. Place the lid over the pot so it is half-open and let the vegetables cook. After 30 min check if there is enough water in the pot, if not pour some more in.
  4. Cook the soup until the vegetables are soft. When the soup is almost done, stir in Ditalini pasta and cook until pasta is al dente. Serve the soup warm.
