Leek stew

Every time my mom made this stew when I was a kid, I would always say “We just had it last week” and the fact was that we had it more then 3 months ago. I wasn’t a stew-lover and I hated it for years to come, but then something changed and I grew to like them. Actually felt some craving after we had a week of grilled and fried food.

Today stews usually make me think of winter, maybe that’s why I’m sharing this recipe now, hoping that thinking of winter would get me through the hot days to come. And most usually we make them during winter and autumn to keep us warm, but you can also change things a bit and make it now, a delicious dish shouldn’t be prepared just once a year and stews are not just winter dishes.

Ingredients

  • 200 g smoked pork ribs or smoked ham hock
  • 200 g potatoes, sliced
  • 450 g leek, sliced
  • 3 tbsp flour
  • 2 tbsp pork fat
  • 2 tsp red paprika
  • salt & pepper

Leek stew

How to

  1. Cook smoked pork ribs or ham hock in a large pot in boiling water over medium heat. When meat is medium-cooked add sliced potatoes and reduce heat.
  2. When sliced potatoes are medium-cooked add sliced leek to the pot.
  3. In a small pan melt pork fat and add flour and red paprika, cook for a min or two stirring the mixture until thick. Add the mixture to the pot.
  4. Cook the stew until thick and rich in flavour, and all the ingredients cooked all the way through. Season with salt and pepper if needed. Enjoy a warm bowl of stew!

  9. Smoked ham hock, potatoes, leeks . . . yum! Sounds delicious, Kreso. There are definitely things I didn’t like as a child that I’ve grown to love as an adult.
