I love making pastries, and desserts, and cakes. Usually I’m the one who gets the last piece of the pie, but I enjoy making it, just for the smiling faces around me who really love what I make. For a few weeks now I couldn’t find time to make a proper dessert because of work, or classes, or all of my other projects, and this week I had time to make even two. First is the Blueberry white chocolate cake you can see on my Instagram profile chefkreso and the second is this delicious Apple cheese tart. For the first one I had my brother and his family come over and hope to post the recipe soon, so stay tuned.
Apple cheese tart – the whole idea didn’t come from wracking my brain trying to think of a recipe or searching the internet, but with opening the fridge and realizing I had to use up the apples and cream cheese I had. Usually the best ideas come from opening the fridge or just checking which ingredients you already have at home, not spending more money and ending up throwing away fruit and vegetables you could have used.
This dessert is light, pretty easy to make and not time-consuming, so try it out. Pull up a chair on your patio and enjoy a slice of this delicious Apple cheese tart!

Ingredients
Crust
- 150 g integral flour
- 125 g butter
- 60 g sugar
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
Filling
- 450 g cream cheese
- 80 g sugar
- 2 eggs
- 2 tsp vanilla extract
- 1 tbsp lemon zest
- 2 egg whites
- 4 apples, sliced
- 40 g vanilla sugar
- 1/2 tsp cinnamon
- 1/3 tsp cardamom
How to
- Preheat the oven to 190° C. Butter a round pie tray.
- Combine butter, flour, sugar, vanilla extract and cinnamon in a large bowl until you get a firm dough. Using your hands form a ball and press the dough into a round pie tray and bake the crust for about 10 minutes.
- In a second bowl mix together cream cheese, 80 g of sugar, eggs, vanilla extract and lemon zest. Beat the mixture until you get a smooth filling. In a second bowl beat together two egg whites until stiff. Manually mix them in with the cheese filling. Spread the cheese mixture over the crust that has been baking for 10 minutes.
- Place sliced apples in another bowl and add 40 g of vanilla sugar, cinnamon and cardamom. Toss everything a few times to coat the apples with spices. Arrange apples over the cheese mixture in concentric circles.
- Lower the heat to 180° C. Bake the tart for about 40-50 minutes but keep checking every now and then so it doesn’t burn. Cool the pie and serve cold. Enjoy!
