Mediterranean mussels

It’s been more than a week since I last posted a recipe. I have to admit it was a hectic time for me, not only that I had to study but also had to go to work and still find time to do all the things needed at home. So finally I organized my time better and I’m here with new recipes.

Last week was also a good week for me because I got a job interview in a big home appliance company which I ultimately couldn’t accept because they needed someone to work there for 2 years and even though I have more time to work a part-time job now, a year from now I’ll have more classes and won’t be able to work as much. The news about getting a second interview came on my birthday last week and even the sun was out. I grabbed a chance and visited one of my favourite restaurants in Zagreb, I spent time with the people dearest to me, played with my niece and nephew and all that while hangover from a party I went to a day earlier.

But let’s get back to the recipe, Mediterranean mussels – one of my ultimate summer recipes. I know it’s not summer, but we can pretend on those warm spring days when the sun is high and clouds nowhere in sight. Today’s a rainy day in Zagreb, I can only imagine myself sunbathing on a beach, drinking cocktails and enjoying a fresh salty breeze, all while listening to David Bowie – one of the true music artists whose songs can really get you moving, I’ve got his song Young Americans stuck in my head all morning.

Cook time: 30 min

Servings: 4


Ingredients

  • 1,5 kg mussels
  • 1 tbsp fresh parsley, chopped
  • 4 tbsp olive oil
  • 4 cloves garlic, pressed
  • 200 ml white wine
  • 1/2 lemon
  • salt & pepper to taste

How to

  1. Using a small knife clean the shells if needed and wash them.
  2. In a large sauce pan or even a large pot heat olive oil. Add pressed garlic and parsley. After simmering for a minute add cleaned mussels, a bit of lemon juice and some salt & pepper if needed.
  3. After simmering for 10 min when shells open add white wine and cook to a boil, then let it simmer for a few more minutes and that’s it! Enjoy!

  2. Yum! Garlic, parsley, and white wine is a classic, I love it! I like to do a white wine and pesto mussel with pesto I make with basil and arugula with pine nuts or fennel fronds and walnuts

  3. Happy belated birthday, Kreso. Love this treatment of mussels cooked simply in white wine, garlic and lemon. I also love them in a tomato broth. But then I love anything that comes from the ocean.

    Ja radim dagnje jako slično, samo dodam još i pelata ili paradajz sosa i malo krušnih mrvica da se sve fino zgusne i da je bolji saft za umakati kruh. 😀

  5. This looks so tasty. I make them in a similar way, but also add a bit if saffron (warmed up first with a bit of hot water) to the wine. It adds so much. 🙂
