For the past few days I was racking my brain thinking of what to buy for a friend of mine for her birthday. First I wanted to surprise her with a shopping coupon in her favourite store but that didn’t feel as original or personal as I wanted it to be. Then I wanted to buy her a perfume she was talking about for months now but it was also a tried out gift. Then it hit me, what does she loves most – cookies! I didn’t think about it a lot, it was a great idea, it was original, personal and I was sure it was going to make her really happy. I put on an apron, pulled out a baking tray, started the oven and the rest is history. I can only say that my present was the one that made her smile the most!
Everyone has their own Chocolate Chip Cookie recipe and this one is mine. I would love if any of you tried it out since there are so many to choose from. I must admit this is not the only Chocolate Chip Cookie recipe I have, but this is the first one I want to share. It’s amazing how with just a few ingredients and in such short time you can get these delicious crispy cookies. The only thing left is to pour yourself a big glass of milk and enjoy!

Cook time: 25 min
Servings: 30 cookies
Ingredients
- 150 g butter
- 300 g flour
- 300 g chocolate chips
- 150 g brown sugar
- 4 tsp vanilla extract
- 2 eggs
- 1 tsp baking powder
How to
- Preheat the oven to 160° C. Place the parchment paper over a baking tray.
- In a large bowl mix together softened butter, sugar and vanilla extract until well combined. While mixing add one egg at a time. Sift together flour and baking powder and add them to the butter mix and combine. Manually mix in chocolate chips into the mix.
- Form small portions of the dough using your hands and place them on the baking tray leaving space between them since they will expand in size while in the oven.
- Bake the cookies in a preheated oven for 10 to 12 minutes. Take them out when you see them changing their color. They will still be soft when you take them out so let them cool down and then enjoy!

I have even shipped cookies to good friends of mine, I really love doing that. I sometimes think if the person has as much fun eating as me baking the cookies, it is double the amount of joy!
