I’m always thinking of or looking for an interesting new lunch idea. There are so many bookmarked recipes I’ve got, there are those printed out just waiting on my desk, even the ones I’ve singled out in different cookbooks my mother bought. Even then I’m just stuck and can’t decide on what to make. But sometimes, even something as simple as a sandwich can be a perfect lunch idea. With a little twist of flavours and a bunch of different ingredients you can make something really delicious.
The sandwich I’m sharing with you today is a combo of flavours I though of a few weeks ago when my brother was coming over with kids. I was planning a different lunch, pasta with vegetable sauce or something like that when my brother phoned. He told me he’ll be over in an hour or two with the kids so I can look after them while he does some work on the house. I was in a bit of a time crunch and since I didn’t go to the market that day to buy vegetables for my pasta dish I did what I could with the ingredients I had. Let me tell you the flavour surprised me, by the time I was done I was so hungry it took me just a few bites to finish the sandwich. Hope you’ll like it, enjoy!

Ingredients
- 2 steaks
- 1 tsp red pepper, ground
- 1 tsp chili flakes
- 1 dl dark beer
- 1 tbsp vegetable oil
- salt & pepper to season
- 2 buns
- 1 tomato, sliced
- 1/2 small onion, sliced
- 2 slices cheese
- 1/2 zucchini, sliced
- 1 tbsp olive oil
- 1 clove garlic, pressed
- 2 tbsp yogurt
- 1 tbsp mayonnaise
- 1/2 tsp dill
- 1/2 tsp shallot
- 2 tsp orange juice
How to
- Season the steakย with ground red pepper, chili flakes, salt and pepper and let it marinade for 10 to 15 min in 1 dl of dark beer. Heat vegetable oil on grill pan and grill the steakย on both sides until medium rare. On the same grill, grill the sliced zucchini on both sides and season with olive oil, a bit of salt and pressed garlic.
- In a small bowl mix together yogurt, mayonnaise, dill, shallot and orange juice.
- Assemble the sandwich by slicing the bun in half. Spread some sauce over the bottom half of the bun, place the steak, grilled zucchini, cheese, sliced tomato and onion. Spread some yogurt sauce over the top half of the bun and finish the sandwich. Enjoy!
