When I told my friends at college that I’ll be bringing carrot cake to class they were apprehensive. Carrot cake isn’t as popular here, and many people never tried it. I must admit I was one of them until a few years ago when I stumbled upon a carrot cake recipe. I was interested how it was going to turn out and I had to try it. I was surprised how tasty it really was. The sweet carrot dough and fresh & zesty cheese cream complementing each other. Even better with the addition of juicy blood orange that brings it to a new level. Thinking of how to describe it in an even better way I realized there are no words for it. Since then Carrot cake became one of my favorite cakes and I prepare it for birthdays or holidays for everyone to enjoy. Because what’s better than sharing food with people close to you?

Ingredients
- 0,5 kg carrot, grated
- 90 g walnut, ground
- 250 g flour
- 1 tbsp baking powder
- 100 g powdered sugar
- 2 tsp cinnamon
- 300 ml melted butter
- 4 eggs
- 200 g butter
- 400 g cream cheese
- 1 blood orange
- 2 tsp vanilla extract
- 2 tbsp rum
- 250 g sour cream
- 80 g sugar
How to
- Preheat the oven to 170° C and butter a round cake pan.
- In a large bowl sift flour, baking powder, powdered sugar and cinnamon. Using a mixer, mix the ingredients gradually adding melted butter and one egg at a time. Stir in grated carrots and ground walnuts and mix well.
- Divide the mixture in three bowls because you’ll be making three layers of the cake. Pour the first mixture into a round cake pan and bake in a preheated oven for about 30 – 35 min. Using a wooden pick check if the cake is baked all the way. After the first layer repeat he process and bake two more layers in a buttered cake pan.
- Meanwhile, in a large bowl mix together softened butter with cream cheese. Stir in sour cream, vanilla extract, rum, half of orange juice and orange zest and combine well.
- Assemble the cake by covering first layer of the cake with cheese cream, then top it with next layer of the cake and repeat. Finish the cake by covering it whole in cheese cream and place it in a fridge. It’s ready after few hours in the fridge. Enjoy!

Looks delicious, Kreso. Carrot cake is a big thing in New Zealand and just happens to be one of my favourites – as long as it has cream cheese icing! Yum, yum, yum!
