Profiterols

Hey guys, here’s another amazing recipe you have to try. I know there are many of you who love desserts and pastry as much as I do and the feeling is even better if you make them yourself. I started rolling the dough and baking desserts when I was still a teenager, and it is never too late to start baking. Not only that you’ll feel happy creating something from scratch , you will probably make others around you as happy if not even more. You may encounter a few bumps along the way, but mistakes are made to learn something from them. In the end you’ll get a delicious dessert which you can enjoy with the ones you love.

Profiterols for me are a great dessert if you have a lot of friends coming over. You can make so many of them, and even though the recipe isn’t as easy and you have to look out for a few details, it’s all worth it.

Ingredients

Dough:

  • 250 ml water
  • 100 g butter
  • 150 g flour, soft
  • 1 tbsp sugar
  • 1 tsp salt
  • 4 eggs, large

Filling:

  • 6 eggs
  • 6 tbsp sugar
  • 1 tsp vanilla extract
  • 10 tbsp cornstarch
  • 500 ml milk
  • 50 g butter
  • 100 g chocolate

How to

  1. In a medium sauce pan heat 250 ml of water, 100 g of butter, 1 tbsp of sugar and 1 tsp of salt until butter melts. Remove from heat and mix in flour until you get a firm dough. Keep stirring until it cools down, about 2 min. Add 1 egg at a time stirring it into the dough. Let it rest & cool down.
  2. Preheat the oven to 200°C. Cover a large baking tray with parchment paper. Using an icing bag squeeze the dough onto the parchment paper 4 cm in radius. Bake in a preheated oven for 35 min not opening the oven until crispy and golden brown.
  3. In a large sauce pan heat 480 ml of milk but don’t let it boil. Mix together 6 egg yolks, 6 tbsp of sugar and vanilla extract. Add cornstarch, mix, then stir in 20 ml of milk. Add hot milk to the egg mixture and stir well. Cook the mixture over medium heat until you get a thick cream. Remove from heat and stir in butter until it melts.
  4. Melt 100 g of chocolate over steam. Cut the profiterols in half and fill them with cream. Cover the profiterols with melted chocolate.

  2. The last time I made choux pastry was at cooking school but your post has inspired me to make them. Perhaps, as you suggest, for some lucky friends! They look truly delicious.

    Cream puffs are one of my favourite quick and easy fancy desserts. I start preheating the oven when I’m cooking the dough. They’re ready to cook at the same time. 🙂

    PS: I don’t bother with a piping bag. Two wet tea spoons and I’m all set. My recipe makes exactly one dozen which fits on a single baking sheet. And I freeze half so I’m not tempted to eat them all at once.
