Apple strudel

A few years ago I was walking down the streets of Vienna. Everything decorated in Christmas lights and in the holiday spirit. Even though it was winter there was warmth taking over while surrounded by so many colors and lights. Hundreds of people on the street looking for a cup of mulled wine or a slice of so many delicious Austrian cakes.

Passing tiny stores with all kinds of souvenirs and bakeries with cakes in their windows pulling you in to take just one slice, or two, or three. While walking down the street, taking in the feeling of Christmas in Vienna, a sensation hit. Like a warm hug, a scent of cinnamon and apples coming from this small bakery. As I entered I could see them taking out warm apple strudel from the oven, and as they did a long line of people wanting a slice formed. Seriously don’t know if I have ever taken a bite out of a more delicious strudel before or after that day.

Since then I have tried all kinds of strudels, my grandmother was an expert in pastries so it wasn’t unknown for her to make every few weeks her own apple strudel. I remember her making it on her old table without breaking a sweat. She was the one who inspired me and taught me how to make strudels. This recipe is a delicious combination of apples and cinnamon, making you feel like Christmas came early this year.

Preparation: 15 min                                  Cook time: 30 min                                  Servings: 6

Ingredients

  • 400 g soft flour
  • 1 tbsp salt
  • 6 tsp oil
  • 200 ml water
  • 1 kg apple, grated
  • 50 g sugar
  • 50 g bread crumbs
  • 2 tbsp lemon juice
  • 1 tbsp cinnamon
  • 1 egg
  • 250 ml cooking cream

How to

  1. Mix together soft flour, salt, oil and water until you get a firm dough. Beat the dough manually and let it rest for half an hour in a bowl, covered with a rag so it doesn’t dry.
  2. Preheat the oven to 180° C.
  3. In a medium bowl stir together grated apples, sugar, bread crumbs, lemon juice and cinnamon. In a second bowl beat 1 egg.
  4. Pull the dough until thin and spread the apple mixture over it. Roll the strudel. Place a parchment paper in a tray and over it the rolled strudel. Spread cooking cream and 1 beaten egg over it. Bake in a preheated oven for 30 min.

      Thank you so much! Vienna is such a beautiful city and it has amazing cakes and desserts, apple strudels being one of them, can’t wait to visit again and try maybe some new and some old recipes. And of course there is nothing better than a bite of apple strudel with vanilla ice cream!
