Stuffed bell peppers

There are recipes and recipes for bell peppers and you can never go wrong with picking one of them. My favorite bell pepper recipe is Stuffed bell peppers, probably because I grew up eating it at my grandparents’ house. And that’s the way this dish is supposed to be enjoyed, in the company of your family and friends, served warm with a big bowl of lettuce salad. A colorful dish with a colorful taste making you remember the good old days or just making new memories.

Ingredients

  • 8 bell peppers, medium
  • 6oo g beef mince
  • 100 g rice
  • 1 egg
  • 2 cans chopped tomato
  • 1 can tomato sauce
  • 1/2 onion, chopped
  • 2 cloves garlic, crushed
  • 1 tbsp red paprika
  • 1 tbsp parsley
  • 1 tbsp oregano
  • 5 tbsp olive oil
  • 1 tbsp Vegeta/vegetables seasoning mix
  • salt & pepper to taste

  1. Wash the bell peppers, cut off their caps and clean the inside.
  2. Preheat the oven to 180° C.
  3. In a large mixing bowl mix together beef mince, onion and garlic, parsley, red paprika, salt, pepper, 1 egg and rice. Stuff each bell pepper with the mixture. Place the stuffed bell peppers in an oiled up glass ovenproof dish and bake them for 15-20 min in a preheated oven.
  4. In a medium bowl stir in the tomato sauce with chopped tomatoes, 1 tablespoon of Vegeta or a vegetable seasoning mix, pinch of sugar, oregano and a tablespoon of olive oil. After 15-20 min of baking, take bell peppers out of the oven and pour the tomato mixture over them. Bake the stuffed bell peppers for another 40 to 45 min in an oven. Serve warm.
