These meatballs can be a great party appetizer or something you can make for yourself or your family served with hot grilled vegetables, or a lettuce and arugula salad. The recipe is simple and doesn’t take up much of your time.

- 450 g chicken, ground
- 1 onion, finely chopped
- 1 clove garlic, crushed
- 1 egg
- 1 cup bread crumbs
- 1 tsp parsley
- 50 g peanuts, crushed
- 50 g mozzarella, chopped
- salt & pepper to taste
- Preheat the oven to 190° C. Take a baking sheet and place the parchment paper over it.
- In a large bowl mix together the ingredients. From the meatball mixture form 4 cm balls and place them on the baking sheet. Bake in a preheated oven for 30min until golden brown.
- Serve the meatballs with mashed potatoes, lettuce and grilled vegetables.
