Broccoli, zucchini & cauliflower casserole with beef mince

One of those days when you open the fridge and you don’t know what to do with all of the vegetables you have. Casserole is the perfect idea on those days, you can put in it what ever you want, from vegetables to meat. A perfect mix of flavors.

Ingredients

  • 150 g broccoli
  • 200 g zucchini
  • 150 g cauliflower
  • 450 g beef mince
  • 10 g butter
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 1 can crushed tomatoes
  • 1 tsp parsley
  • 100 g mozzarella, grated
  • salt & pepper to taste

How to

  1. Preheat the oven to 200° C. Butter a square casserole bowl.
  2. In a large cooking pot boil slightly salted water. Cut the broccoli, zucchini and cauliflower in wanted sizes, preferably about 4 cm. Place the vegetables in boiling water and blanch for a few min. Dry the vegetables.
  3. Heat the olive oil in a large sauce pan over medium heat. Add onion and garlic and simmer until light brown. Stir in beef mince and cook for 5 – 10 min. Reduce heat and mix in tomatoes, salt, pepper and parsley and let it cook for 10 more min.
  4. Place the vegetables in a buttered casserole bowl and pour the beef mince sauce over them. Top it with grated mozzarella. Bake the casserole for 30 min until golden brown.
