Međimurska gibanica

This amazing cake is a traditional pastry in Croatia. It has everything from walnuts to poppy seed, cheese and apples. Seems like a crazy combination, right up to the point when you take your first bite and all those flavours form an unbelievable sensation.

Preparation: 30 min                                  Cook time: 40 min                                  Servings: 8


  • 11 pieces strudel pulled dough
  • 0,2 l heavy cream
  • 2 eggs
  • 20 g sugar
  • 100 g butter

Poppy seed mixture:

  • 200 g poppy seed, ground
  • 0,2 l milk
  • 50 g sugar

Cheese mixture:

  • 500 g fresh quark cheese
  • 2 eggs, medium
  • 70 g sugar

Walnut mixture:

  • 200 g walnuts, toasted & ground
  • 50 g sugar
  • 0,2 l milk

Apple mixture:

  • 700 g apples, grated
  • 50 g, sugar
  • 1 tsp cinnamon

How to

  1. Preheat the oven to 180° C. Butter a round or a square cake pan.
  2. For the poppy seed mixture in a large bowl mix together ground poppy seeds with sugar and pour boiling milk over it.
  3. In a second bowl mix together cheese, eggs and sugar.
  4. In a third bowl mix together walnuts and sugar. Pour boiling milk over it.
  5. In a fourth bowl mix together apples, sugar and cinnamon.
  6. In a fifth bowl stir together heavy cream, eggs and sugar.
  7. Assemble the cake by placing 3 pieces of dough in a buttered cake pan. butter the dough before placing the walnut mixture over it. Top the walnuts with 2 pieces of dough and butter them again. The second layer of the cake is cheese and then another 2 pieces of dough. Butter the dough and put the poppy seed mixture on top of it. As you already know by now, then come the 2 pieces of dough, butter and apples as the final layer of the cake. top the cakes with the last two pieces of dough and top the cake with the heavy cream mixture.
  8. Bake the cake for 40-45 min until golden.
